Ingredients of Puran Poli:

Preparing the filling of Puran Poli:

Boil the dal carefully that it softens but is not broken. After that, place it on a colander for about 10 to 15 minutes so that the water drains away. Use an almond grater to grate the soft dal. Set it aside and mash the jaggery to make it a smooth powder. Mix dal and jaggery together. Put the mixture into a non-stick saucepan. Turn on the low flame and cook it. Keep on stirring the mixture continuously. Cook it until it becomes a soft lump.

Making the dough of Puran Poli:

Mix ghee in the flour and knead it to make a dough. Add as much water as required to make it a fine pliable dough. Make small balls of the dough. Roll the ball to make a roll round of about 4 inches.

Combining all together:

Place a small amount of the filling into the center of the round roll. Now turn the round roll onto the filling in a way that filling is wrapped up inside the dough. Make sure that the resulted shape is also like a round ball. Now roll it again to make a chapatti of almost 6 inches. Cook it on a warm griddle till it turns golden brown.

Take it on to the serving dish and apply one tablespoon of ghee all over it. You can also add ghee while you were cooking it on the griddle. But this will require more ghee and will also increase the calorie level of the dish.
